This holiday season I’ve been working on a new mocktail to keep with the festivities. This year, my idea was to emulate a Peach Cobbler. The base of that I figured requires only three pieces:
Peach
Vanilla
Winter Spices
So follow me quickly with my thought process here: the original idea was to do a very simple cocktail with Goya peach nectar, cream soda, and a winter spice simple syrup. It came out delicious, the peach nectar with the finish of cream soda really reminded me of my days in the Boy Scouts; cracking open a couple of cans of peaches with whatever spices and pancake mix we had to get close to a cobbler. I got this weird need for the chilly warmth that runs through you when caught by a winter breeze while posted up next to a campfire. It was nothing short of Nostalgia. But, it ended up feeling a bit too artificial for the boujee fauxtini I'd imagined (but it's also really good and I drank it for a couple days straight so I included it here).
Winter Spice Simple Syrup
Ingredients
.5 c brown sugar
.25 c white sugar
1 cinnamon stick
3 allspice berries
2 cloves
1 tbsp vanilla extract (or whatever the preferred vanilla in your house is)
.75 c water
Steps
Crush up spices in mortar and pestle
Add to a pan with the sugars, water and vanilla
Heat until sugar is dissolved
Strain and cool (I like to keep mine in a squeeze bottle)
Peach Cobbler Tall
Ingredients
Peach nectar (Or relatively thick peach juice)
Winter Spice Simple Syrup
Cream soda
Ice
Steps
Fill up the preferred glass halfway with ice
Cover ice with peach nectar
Add in a solid squeeze (.5 tsp) or Winter Spice SImple Syrup
Top with cream soda
The second iteration was still with the cream soda and winter spice, but this time I used peach tea instead. It was also decent, but not at all what I was looking for (it tasted like peach Snapple). The tea itself was delicious and really caught that fresh peach flavor I was looking for.
My third iteration is where I decided to use the peach tea, a splash of peach nectar, and the winter spice simple. With the expansion of ingredients, it needed to be mixed up. So naturally I tried a version shaken and another stirred. The shaken version ended up producing a beautiful froth on top, reminding me of an espresso martini.
In the end, for this final iteration, I decided to serve it shaken, up, and in a martini glass to show off the beautiful froth. I started with the goal of a super drinkable peach cobbler to enjoy on the holidays, and ended with a beautiful fauxtini.
Peach Cobbler Fauxtini
Ingredients
1.5 oz chilled peach tea
.25 oz Winter Spice Simple Syrup
.5 oz peach nectar
.5 oz lemon juice
Ice
Steps
Add in a shaker all the ingredients and ice
Shake vigorously
I promise you need to keep shaking
Keep going until your hands are really cold and it's no longer fun
Strain into a martini glass, top with a pinch of cinnamon and enjoy
